This organic cacao comes from central Nicaragua. Both cocoa growing and harvesting are done by local small farmers with the support of the Cacaonica cooperative. Cocoa is grown in small-scale agroforestry alongside other crops such as mango and banana trees. Farmers use only organic fertilizers to grow cocoa, such a system promotes farm biodiversity, prevents deforestation and protects water availability. V’vaya cocoa has an intense chocolate profile with expressive notes of tannins, cherries, berries and oranges, as well as hints of spices and herbs. Whole cocoa beans are ground for up to 48 hours in a granite stone mill, creating wonderful nuances of flavor and creating a smooth, silky cocoa mass that transforms into lively and powerful cocoa.
